I hate counting calories.  Honestly, what could be more annoying than tracking your food on a daily basis?  Unfortunately, I’ve learned that there are times when that is exactly what we must do (temporarily).

Possible Reasons: 

When you have completely fallen off the path of eating high nutrient foods.

When you are facing medical conditions or injuries.

When you need to track a certain individual category such as sodium, carbohydrates, etc.

When you’ve hit a plateau in your wellness journey.

You may also want to track when you are traveling just so you don’t go crazy when eating out.

Scenario: 

My 3 friends (that I grew up with) and one grown daughter were at our bi-weekly (okay, sometimes weekly) lunch last week when the subject of “my fitness pal” came up in conversation.  It seemed that most of us used this method of tracking at one time or another.  Super easy to utilize!

Keepin It Real

Some of you may have noticed that I’ve recently started taking a more laid back approach to being healthy and I’ll tell you why.

  1. We have an obesity crisis in America.  Today, 5 out of 7 people on the elevator at my college were not only overweight but they were obese.  Beside myself, they were all under the age of 21.  We have to start from the basics and teach people realistic guidelines.  There are so many of you that are far ahead of the fundamentals of good nutrition and exercise that I decided to take a step back and re-evaluate how I can help those that are not equipped with the same information.
  2. My years of study have taught me that you don’t need to give up certain nutritional food groups unless you are actually having a problem, intolerant or allergic.  I’ve come a long way since I was at the point where I could barely eat anything and I still can’t tolerate lactose, milk and soy.  I try to stay away from those foods.  I feel better if I don’t eat a lot of meat products but I’m fine when I eat fish.  You have to figure out what works for you.  For example, I’m not going to tell someone who feels perfectly fine when they eat gluten to give up gluten.
  3. Balance is key to maintaining a healthy lifestyle.  A lot of people get stuck on either intense workouts or restrictive diets (or both) but they don’t understand that being healthy long-term requires a balance between high nutrient food, realistic exercise programs and taking care of themselves mentally as well as spiritually.
  4. For those of you that don’t know me, I’m a medium size person and I’m okay with that because I know I’m healthy.  Study after study shows that being obese takes a toll on the body but it’s just as dangerous to be skinny or medium if you are eating junk and spending most of your time being inactive. I’m pass the days of forcing myself to be a size I wasn’t born to be.  When people force their bodies to be thinner than they are meant to be, they are most likely cheating themselves out of valuable nutrition.  If you come to me for help because you want to be “skinny”, unfortunately I will have to turn you away.  I will not compromise my beliefs for vanity.
  5. I’ve said it before and I’ll say it again, “Diets” don’t work but guess what, neither does eating processed food, tons of sugary foods and junk food.  You want to eat as much high nutrient food as possible.  People make it harder than it needs to be.  Don’t get me wrong, there are times, I go through phases where I want to eat an entire cake in one sitting (PMS) but again, it’s all about balance.  Obviously, eating cake everyday or even once a week, wouldn’t be good for me but having an occasional piece at a b-day party isn’t going to kill me either.

I’m committed to continuing my education so that I can learn the best ways to instruct people how to be healthy sensibly.  Unless someone has a food allergy or intolerance, I won’t be suggesting they give up a nutritional food group.  “Skinny” will be thrown out of my vocabulary.  Anything we become obsessed with usually doesn’t turn out well.  Eat clean, move your body and be kind to yourself and those around you.

You What?!

Someone asked me the other day…”How do you eat perfectly all the time?”

My answer surprised them…

“I don’t.”

BUT, I eat clean about 85-90% of the time so those times I do treat myself, I don’t have to freak out.

See, I spent over 11 years away from my family and friends and now that I’m living back in my hometown, I’m going to enjoy the occasional cupcake that one of my friends brings to our weekly luncheons or have a slice of birthday cake at family birthday parties.

I’ve learned a lot about nutrition and food psychology over the past 11 years and even more so in the past 3 years.

Deprivation will get you in a lot of trouble mentally and physically so the key is to learn to balance. 

Don’t let food rule your life.  Eat clean most of the time but enjoy a treat every now and then.

South Korea Bound…

Avocado’s & Pit’s

One of my Vitamin De face book friends (Kristy), suggested the featured recipe and I’m not even exaggerating when I tell you that it’s delicious!

15 minute Creamy Avocado Pasta

Ingredients

1 medium-sized ripe Avocado, pitted

½ lemon, juiced

2-3 garlic cloves

½ teaspoon sea salt

1-teaspoon basil

2 tablespoons extra virgin olive oil

Your choice of pasta

Black pepper to taste

Directions

  1. Cook pasta according to directions
  2. Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor.  Process until smooth.  Now add in the pitted avocado, basil, and salt.  Process until smooth and creamy.
  3. When pasta is done cooking, drain and rinse in a strainer and place pasta into a large bowl.  Pour on sauce and toss until fully combined.  Serve immediately.  Makes 2 servings.

*Note:  This dish not reheat well due to the avocado in the sauce.  Please serve immediately.

If you have tried natural deodorants in the past you know that it’s not easy to find one that really takes the place of your everyday ordinary one’s.  I’ve gone through several and finally stumbled across one that works for me.  What does it smell like?  Nothing.  Not even at the end of the day.  You stay fresh but it seriously smells like nothing.  I can’t explain it.  All I know is that when I read the ingredients, I can understand every single one listed and I like that.

Crock-pot Quinoa Stew

I love healthy food but I don’t want to spend all day in the kitchen preparing it so when I come across a crock-pot recipe with nutritious ingredients, I get a little excited.  :)

*This recipe may look like it has a lot of ingredients but most of its seasonings which makes this dish DELISH!

Quinoa Stew

Ingredients

1-tablespoon olive oil

3-4 garlic cloves, pressed

2 handfuls of chopped up celery

2 handfuls of chopped up mushrooms (any kind is fine)

1 red or green pepper (or half of each), diced

————————————————–

½ teaspoon red pepper flakes

1-teaspoon cumin powder

1-teaspoon paprika

1-teaspoon dried basil

¼ teaspoon chili powder

1-tablespoon soy sauce (low sodium)

Black pepper to taste

————————————————–

½ cup uncooked quinoa

3 cups of water

8 ounce unsalted tomato sauce

1 can (15 ounce) kidney beans (drained and rinsed)

1 can (15 ounce) black beans (drained and rinsed)

Directions

  1. Sauté garlic, celery, mushrooms and pepper in oil for 10 minutes on medium.
  2. Add spices, herbs and soy sauce to mixture and stir in for a few minutes.
  3. Combine water, tomato sauce, quinoa and beans in a large crock-pot.
  4. Add mixture from step number one. Stir.
  5. Cover and cook on low for 5-6 hours.

*If you like it hotter (sounds a little personal) add more chili powder or red pepper flakes.

mom, Mom, MOM!

I love my Birthday, Valentine’s Day and Mother’s Day.  Quite uncommon, I know… but I have serious legitimate excuses for enjoying all three of these days.  First, being an adoptee, I’m lucky to have been born at all so I celebrate my birthday for at least 7 days each year.  It’s a big “whew I made it out alive” celebration.  Second, I’m a romantic and who doesn’t love chocolate?  Last but not least, I’m lucky to have a mom that gave me everything a child could ask for and I’m also quite proud of the mom I turned out to be.  No matter what I do in life, being a mother is my greatest accomplishment.  Happy Mother’s Day everyone!

Belated Mexican Recipe

I have no idea how I missed Cinco de Mayo.  It’s a little embarrassing, one because I love Mexican food and two, because I’m part Hispanic (not in any particular order).  I deeply apologize and to make up for it, I’m sharing my quick guacamole recipe.  I wish I had exact measurements for you but I don’t.  It’s one of those recipes you just have to eye-ball it.  That is the weirdest saying.  Eye ball it?  Really?

Ingredients

2 avocados  (scoop out the inside)

Salsa (maybe a cup?)

Limejuice (maybe 2 tablespoons?)

One clove of garlic

Directions

Place all ingredients in a food processor, blender or mash and mix by hand.  Mix until smooth.

*Seriously, it seems you can never make enough of this stuff!

As you know, I’m addicted to coconut oil as a multi-use beauty product.  Did you know you can brush your teeth with it?  I’m not lying.  It’s crazy, but true.  Just put it on your toothbrush and get to it.  It’s supposedly helps gum sensitivity, heel gums, brightens teeth and is naturally deodorizing.  I’m going to try using it for a week straight, but I’m kind of a freak when it comes to my teeth so the minute I feel like it’s not making me feel fresh, I’m bailing out.

Below is a picture of the amount of space (5.5×8.5 feet) I use to workout everyday.  Granted I have a treadmill and a jump rope when I feel like branching out a little but you don’t need a lot of space to get in a good workout.

Crock-Pot Stock and Edible Flowers

By now you probably know that I’m a big fan of quick easy meals with the least amount of ingredients.  I also like to take as many short cuts as possible in the kitchen and while grocery shopping and still stay true to my healthy lifestyle.  With that said, when my friend Wendy e-mailed me a recipe for homemade vegetable stock, I was a little hesitant at first even though I’ve been skeptical of store-bought broth.  Then I noticed the words “slow cooker” and instantly jumped on board.  Below is the exact message she sent me.

I came across an easy recipe for homemade veggie stock. You make it using your own left over and older veggies. Just keep the parts of veggies that you don’t use while cooking (i.e. first layer of onion, ends of carrots and celery, cucumber peels, ends of lettuce, etc.) Keep a large freeze bag and just put all the scraps in the bag. When the bag is full, put them in your slow cooker and cover with water. Cook for 8 or more hours. Strain well. Done. I just did this and got about 8 cups of veggie stock to use for other recipes. It smelled so good; we almost ate it like a soup! 

I started “collecting” my left over veggies on Sunday, so hopefully this coming weekend; I’ll be able to try it.  Thanks, Wendy!  :)

Keep it Clean

I’ve never been a coffee drinker but some of my closest friends/family not only love coffee, but may be borderline addicts.  :)  A cup or two a day is no big deal but anymore than that can lead to nutritional deficiencies, headaches, anxiety, upset stomach, insomnia, nervousness, ringing in ears, irregular heartbeats, increase in total cholesterol and other health problems.

My husband was a big coffee drinker until he quit cold turkey last year.  He now enjoys Chicory, which is a root and is naturally caffeine and gluten-free.

I’ve also been reading about Choffy, which is made from 100% premium cocoa beans that contains less caffeine than a cup of decaffeinated coffee.  http://www.drinkchoffy.com/

Have you ever walked pass someone in the store and almost got knocked out by the smell of his or her perfume/cologne?  Contrary to popular belief, it’s not only the cheap perfume/cologne that can produce that type of reaction.  I don’t wear perfume often but I’m always trying to find the brands with the least toxins (not easy).  My friend Jayme bought me one by ‘love & toast’, which has a honey coconut scent that goes quite well with my coconut oil addiction.  I’m not sure how it rates as far as overall toxins but this brand does well with their other products.  I also really like Sally B’s Skin Yummies (Simply B) Solid Perfume; it has a very mild citrus vanilla scent.  Again, I haven’t been able to find the data on the toxin level but it’s featured in a lot of natural magazines and blogs.  I like to smell scrumptious without offending anyone.  :)
